Eat all the junk food you want as long as you cook it yourself (Food Rule #39) –Michael Pollan
If you are active like me and eat vast amounts of veggies, fruit, beans, nuts, etc. yet are not a huge fan of carbs, and a highly discriminating eater of sweets at that ~ give this recipe a go!
Mix dry ingredients in large bowl:
1C White flour
½ C Whole wheat flour
½ C Sugar
1 t Salt
2 t B. Powder
1 Handful blueberry granola
(Any dried or fresh-mushed fruit is fine, but the granola listed above is OUTRAGEOUSLY GOOD in this recipe!)
Make a well in dry ingredients and pour in wet ingredients:
¼ C Oil
1-3 Squirts of Agave syrup
¾ C Soy milk
(I use powdered soy mix ’cause I don’t drink enough to merit buying it in liquid form)
- Stir just until dry is barely mixed into wet, and pour into muffin tin liberally “greased” with Earth Balance Buttery Spread.
- Drizzle a small amount of melted Earth Balance onto each muffin top.
- Cook until the knife comes out clean (no batter-goo adheres)!
400° 25-35 min.
