Delicious [Vegan] Cake!


Every once in a while I will post a healthy recipe on this site for others to prepare and enjoy. While “cake” may not technically be considered health food, we are always on the lookout for easy “treats” that do not contain dairy, yet somehow manage to still taste delicious. A big shout-out to our friend Anna (who will be with us for our first two Inservice camps in October) for passing along this recipe:)

1.5 C Flour
1/2 C Unsweetened Cocoa Powder
1t Baking Soda
1/2 t Salt
1C Sugar
1/2 C Vegetable Oil
1 C Cold Water or Brewed Coffee
2 t Vanilla Extract
2T Vinegar

Preheat Oven to 375 degrees

Sift all dry ingredients into a large bowl.
In smaller bowl blend all wet ingredients except vinegar.
Pour liquid into solid ingredients and mix with a whisk or fork.
When batter is smooth, quickly add vinegar. Stir until light “swirls” are blended in and pour into an 8″ suqare pan, or 9″ round cake pan.

Bake for 25-30 min.

Also makes good cupcakes!
